Where Time is Brewed, and the Soul is Etched

SOUSHIN is not merely sake.

It is a convergence of twenty years of time, vanishing craftsmanship, the terroir of Noto, and the quiet devotion of those who created it.

Founded in 1868, Matsunami Brewery has preserved its brewing philosophy across generations.

The bottle bears the artistry of Horiyoshi III, one of Japan’s most revered masters.

Within lies a depth of flavor that can only emerge through time — refined, composed, and enduring.

These elements are brought together as one.

SOUSHIN was created to carry the spirit of Japan to the world.

THE ORIGIN

A Vision of Aging, Begun Two Decades Ago

The sake used in SOUSHIN is not an accidental relic of time.

It was intentionally brewed nearly twenty years ago, with a clear vision — to explore the future potential of aged sake.

Time transforms.

It softens the edges, reshapes the aroma, extends the finish, and builds a quiet complexity that cannot be replicated.

What SOUSHIN expresses is not simply aging.

It is an alternative completion of sake — a form that can only be reached through time itself.

HORIYOSHI Ⅲ
LEGEND OF TATTOO MASTER

HORIYOSHI Ⅲ

In the world of tattooing, where hereditary succession is strong, Horiyoshi III was exceptionally chosen by the second-generation HORIYOSHI, a position usually reserved for a direct son. For him, tattooing isn't about being good or bad but about expressing fantasy and legends. He brings to life non-existent beings like Sun Wukong (Monkey King) and dragons. Adhering to such beliefs, shortly after assuming his title, Horiyoshi III attracted the attention of the industry and became a legendary tattoo artist frequented by world-famous celebrities.

MATSUNAMI BREWERY
SINCE 1968

MATSUNAMI BREWERY

Established in the first year of the Meiji era (1868), Matsunami Brewery has grown as an entity enshrouded in mystique and dignity. The "Ooe-Yama," a creation sprung from the foresight of the founder, M r .Kinshichi, embodies the majestic strength of great mountains. Yama means mountain in Japanse. The brewery initially expanded its operations in Fushiki but opted for an unwavering pursuit of sake-making in Matsunami after setbacks caused by a fire.Matsunami Brewery carries forward the wisdom and traditions of its forebears while also embracing new challenges, including utilizing Noto's local ingredients. It actively encourages brewery tours to convey the ancient traditions to today's generation and promote the allure of Noto through sake.
